Rockford Sparkling Black Shiraz is inspired by the sparkling Shiraz wines of the late Colin Preece of Seppelt, who cemented this style as an Australian wine icon.
The wine contains a base of aged Shiraz made by Robert O'Callaghan in the 1970s. More recent vintages of estate Shiraz are added to the seasoned oak solera for three years.
This method of fractional blending creates a consistent style and quality, then bottle fermentation revitalizes the wine. It is left on lees for one year before it is disgorged and liqueured.
The wine is then put straight back in the cellar to age further prior to release. It is produced in extremely limited quantities.
Deep red, Rockford Sparkling Black Shiraz has opulent fruit flavours and smooth, velvety tannins. Its softness, depth and complexity are impossible to duplicate in young wines.
A keystone of Australia's wine heritage. Cellaring potential is five years from release.
